Spinach Bacon And Tomato Salad







A half pound of bacon is typically eight to 10 slices.


Dress up a traditional spinach salad with the addition of tomatoes and bacon to sweeten the dish. Additionally, bacon drippings are combined with dressing to coat the salad in a meaty flavor. Making a spinach, bacon and tomato salad requires only a few minutes of your time and some fresh veggies from the grocer. The spinach, bacon and tomato salad recipe yields eight 1 1/4-cup servings.


Instructions


1. Chop 1/2 pound of sliced bacon into 1-inch pieces and fry in a skillet over medium heat until crispy. Set the bacon to the side on paper towels and reserve 3 tablespoons of bacon drippings in the skillet. Discard any extra drippings.


2. Pour 1/2 cup Catalina salad dressing, 1/2 teaspoon salt and 1 teaspoon pepper into the skillet with the bacon drippings. Stir the bacon dripping mixture over low heat for three minutes.


3. Combine 8 cups baby spinach, 2 cups cherry tomatoes, 1/3 cup crumbled feta cheese and the sliced bacon in a salad bowl.








4. Drizzle the bacon dripping mixture in the skillet over the top of the salad. Stir the salad gently with a large spoon.


5. Chill for one hour in the refrigerator before serving.
