Make A Change For The Feta

Put feta cheese on top of your salad instead of cheddar.


"Make a change for the feta" was an advertising campaign by Athenos in summer 2010. The company was challenging consumers to replace cheddar cheese in their salads with feta cheese. In the advertisement, it states that feta cheese has 30 percent fewer calories than cheddar while still having "all the flavor you expect from your cheese." White and crumbly, feta cheese is a brined curd cheese made from sheep's milk or a mixture of sheep's and goat's milk.


Instructions








1. Cook a chopped onion and 3 chopped cloves of garlic in a pan for about 3 minutes in 1 tbsp. olive oil.


2. Add 1/2 cup sliced mushrooms, 2 sliced peppers and 1/2 cup chopped carrots and continue to cook for 3 minutes. Stir the food around as you're cooking it.


3. Add 1/3 cup frozen corn, 1/3 cup frozen peas, 1/4 cup chopped celery, salt and pepper to taste. Stir and cook for an additional 3 minutes.


4. Mix quinoa in with it and stir. Squeeze the juice of 1 lemon and mix.


5. Place 1 cup of crumbled feta cheese on top of the salad and enjoy.
