Crepes

Crepes are an extremely thin type of pancake made out of wheat flour. They came from the Brittany region of northwestern France. Crepes are considered to be the French national dish, though they are popular in many other countries around the world as well. They are often served with fruits (especially bananas and berries), syrup, whipped cream or lemon cream.

Function

Crepes are prepared by pouring a liquid batter into a frying pan, usually with a small amount of butter on the surface of the pan. Then the batter is smoothly spread over the pan's surface, usually by distributing the batter with the use of a spatula. The batter can also be spread by gently tilting the pan.

Types

There are various different types of crepes. Crepes Suzette is a popular kind of crepe. It comes with liqueur (such as Grand Marnier) and with lightly grated orange peels. Mille Crepe comes with many thin layers of crepe (the name means "thousand" crepe, suggesting many layers). These are two of the most common crepe types. Crepes can be both sweet and savory. When they are sweet, they are usually served as dessert.

Geography

Many countries all over the world have their own variations of crepes. Crepes are comparable to many foods from all over the planet. In Africa, there is the injera. Denmark has Pandekages, Romania has clatitas, Spain has filloas, the Netherlands have pannekoeken and Poland has nalesniki. The concept of the crepe seems to be catered toward a rather universal taste.

Expert Insight

There are many different fillings for crepes. For breakfast crepes, diced ham, grated cheese and scrambled eggs are all terrific filling options. Raspberry preserves and powdered sugar are also great fillings. For a more savory crepe option (for lunch or dinner), mushroom gravy, tarragon chicken, beef stroganoff, sour cream sauce and broccoli in melted cheddar are all very tasty when combined with the crepe. Dessert crepes are often filled with powdered sugar, orange zest, cinnamon, poppyseeds, berries, Nutella, nuts and much more.

Benefits

There are many places to purchase crepes in the United States. You don't have to go all the way to France to get a delicious, authentic crepe. Some crepe chains based out of the United States include Crepe Maker, The Crepe Cafe, Crazy Crepes, Melt Gelato and Crepe Cafe, and Magic Pan.
