Bbq Like A Pro

Slow cook your favorite meat to BBQ like a pro.

Backyard BBQs are a summertime tradition in many parts of the United States. Certain states have distinct varieties of BBQ known as the eastern and western style. According to North Carolina Travels, eastern BBQ generally has a vinegary sauce while western style has a ketchup-based marinade. Professional BBQ judges rate BBQ based on appearance, tenderness and flavor. Food Network stars Pat and Gina Neely recommend using indirect heat to slow cook your BBQ to perfection.

Instructions

1. Purchase bone-in meats to keep the meat together and lock in juices. Apply your favorite dry rub or marinade to the meat 2 hours before cooking. Pour some charcoal into a charcoal chimney and place it into the base of your grill's smoker box

2. Ignite the charcoal using a grill lighter. Pour out the charcoal once it has been adequately heated. Apply some tinfoil over the grate of the grill.

3. Soak some hickory wood chips in a bowl of water for a few minutes. Place the dampened wood chips over the tinfoil. Close the lid of the box to allow smoke to emanate through your grill.

4. Align the marinated meat onto the grilling racks of your charcoal grill. Utilize tongs when flipping to avoid piercing the meat and releasing the juices. Avoid flipping the meat constantly to allow a thin crust to form.

5. Allow your meat to slow cook on the grill for around 1 hour and 15 minutes while flipping it occasionally. Braise both sides of the meat using your favorite marinade. Remove the meat from the grill after 20 minutes.
