Make Bubble And Squeak

Similar to Irish colcanon, English bubble and squeak is a savory dish of potatoes and cabbage. It is traditionally created with vegetable leftovers from Sunday dinner. The name is derived from the sound the dish makes as it is cooked. Although bubble and squeak is a clever use of leftovers, it is often made from scratch as a dish on its own. Whether it's made from scratch or reused leftovers, this combination of potatoes and cabbage is a tasty dish that is simple to make.

Instructions

1. Put the potatoes, cabbage, carrots and Brussels sprouts in the large bowl and mash them together.

2. Heat the butter in a skillet and cook the onions until they are translucent.

3. Add the mashed vegetables and salt and pepper, and continue mashing and combining them in the skillet until they are very warm.

4. Press the mixture down firmly into the skillet and let the underside brown.

5. Slide the mixture onto a plate, browned-side still down. Place the skillet over the mixture on the plate and flip both the plate and the skillet. Cook the other side until it is also browned. Serve warm.
