Flavor Pinto Beans


Pinto beans are a versatile and nutritious dried bean with many culinary uses. Because they are high in protein, they also are a suitable replacement for meat in cooking. According to New Mexico State University, when you combine pinto beans with rice or corn, they become a complete source of important amino acids that will keep you healthy and energetic. When you prepare pinto beans, flavor them with a variety of herbs and spices for a delicious meal.








Instructions


1. Sort the pinto beans and discard any tiny rocks or shriveled beans. Wash the beans several times in cool water and drain them well.


2. Place the beans in the stockpot and cover them with 1 to 2 inches of water. Boil the beans for two minutes and then turn off the heat. Allow the beans to stand in the covered stockpot for one hour and then drain them.


3. Return the beans to the stockpot and cover them with fresh, cool water. Add 1/8 tsp. of baking soda for every cup of beans. Place the stockpot back on the stovetop and boil the beans. Reduce the heat to medium-low and cook the beans for approximately 1.5 hours.


4. Add 1 tsp. of sugar, the diced onions and the minced garlic clove. Add salt and pepper to taste. Stir in 1 to 2 tsp. of Worcestershire sauce, if desired.








5. Continue cooking the pinto beans until they are tender, approximately 1.5 hours.


6. Remove the pinto beans from the heat, and serve them or add them to a recipe.
