Roast Pork In A Clay Cooker

Prepare a moist pork roast in a clay cooker.








Clay cookers have been used as roasting vessels for generations. Preparing meats, especially lean pork, in a clay cooker produces moister results than roasting in an open metal baking pan. Before cooking the pork roast in the clay cooker, the cooker is soaked in water. This water turns to steam in the oven and helps to keep the pork moist. Always put the clay cooking vessel into a cold oven to heat it slowly and prevent it from cracking.








Instructions


1. Soak the clay cooker and lid for 10 minutes in water.


2. Place the pork roast into the base of the clay cooker.


3. Add the other ingredients on top of the pork roast.


4. Cover the cooker with the clay lid and place into a cold oven.


5. Turn the oven temperature to 425 degrees Fahrenheit.


6. Cook the pork roast for 2 1/2 hours or until a meat thermometer registers 160 degrees Fahrenheit when inserted into the deepest part of the meat.
