Make Mini Quiche Appetizers

Eggs are the key component to any quiche.


Mini quiches are bite-sized and work well for a quick appetizer or as a dish for a potluck function. These quiches also can be an addition to your breakfast or brunch table, and can be made healthier by using half egg whites and half whole eggs. You can customize these mini quiches in a variety of ways, such as by adding different cheeses, mushrooms, onions or spinach.








Instructions








1. Preheat oven to 350 degrees. Grease two mini muffin pans, or plan on making two batches with the same pan.


2. Melt butter in a skillet on medium-high heat. Add onion and saute until softened. Combine bacon and onion and saute for one to two minutes. Drain and set aside.


3. In a medium bowl, beat eggs. Stir in baking mix, parsley, cheese, bacon and onion. Spoon into greased muffin cups, filling them about halfway.


4. Bake for 10 to 15 minutes until tops are lightly browned. Allow mini quiches to cool in pan before removing. Serve warm.
