Make A Vegetable Lollipop

Vegetable lollipops are an Indian dish made from vegetables and spices. The deep-fried snacks have a Popsicle stick inserted through the center so that they resemble candy lollipops, hence the name. They can be served as an appetizer, an accompaniment to a main course, or even a main dish if served with vegetables and rice. This unusual twist on vegetables will add a touch of something different to your next Indian cuisine meal.


Instructions


1. Steam the potatoes, carrots and peas for 20 minutes in a vegetable steamer or pan with 1/4 inch of water and a tight fitting lid. Potatoes are done when a fork can be inserted easily into the potato.


2. Cool the vegetables for 30 minutes in the refrigerator.


3. Add the remaining ingredients to the vegetable mix and mash with a fork.








4. Form the mixture into 8 round balls.








5. Poke one Popsicle stick into each ball. Flatten slightly.


6. Deep fry in 350 degree F oil until golden brown (about 5 minutes).
