Grill Venison With Charcoal

Perhaps you have venison steaks from either a hunt or your local butcher but aren't sure cook them. Or maybe you've heard that venison can be tough and gamey, and you aren't sure you want to try. You can learn grill venison with charcoal in a few simple steps. Remember that venison isn't like beef--it's leaner and will dry out if you don't take special care of it. To avoid cooking your venison to a dry shoe leather, baste it with butter or some other sort of fat to keep it flavorful and tender.


Instructions


1. Start charcoal grill. Wait until the charcoal turns gray and the coals are hot.


2. Pat the venison steaks dry with paper towels. Excessive moisture will cause the steak to toughen.


3. Sprinkle garlic salt and cracked pepper over both sides of steaks--no more than 1/8 tsp. each or to taste.


4. Put steaks on the grill and lay a teaspoon of butter or a piece of bacon on top.








5. Turn steaks and add more butter and bacon as required to keep the meat moist. Remove the bacon from the top side and put it back on after you turn the steak.


6. Test steak for doneness with meat thermometer. Steak interior should read 160 degrees.








7. Remove from grill and serve.
