Boil Calamari

Boiled calamari is delicious in a salad.


Boiled calamari is often used in a seafood soup with scallops and mussels or in a salad. Calamari all'insalata is a popular Sicilian (Italy) dish. When adding boiled calamari to a dressing or other dish, it is a good idea to cook and season the squid a day ahead of time to allow the flavors to be fully absorbed. You need to boil calamari with some herbs to enhance the flavor but don't use overpowering herbs or spices since squid is a delicate seafood.








Instructions


1. Fill two pots with salted water.


2. Add the squid bodies, the juice of ½ a lemon (squeeze it directly into the water), 1 bay leaf and a small palm of salt into the large pot and bring to a boil. Place the tentacles, the juice of ½ a lemon, 1 bay leave and a tsp. of salt in the small pot and bring to a boil.








3. Lower the heat to medium and cook the large pot for 25 minutes and the small pot for 15 minutes..


4. Remove both pots from heat. Allow the squid bodies to sit for five extra minutes in the cooking water while the tentacles need to sit in the water for 15 more minutes.


5. Add any other flavorings you desire and serve. If you are making the calamari in advance for a salad, mix it with the dressing, barely cover it with water and refrigerate until you are ready to use it.
