Make Oat Bran Pancakes


Oat bran pancakes are a healthy breakfast food that can be modified for high-protein or low-sugar diets. Oat bran is believed to lower cholesterol and prevent heart disease when eaten on a regular basis. It also helps regulate the gastro-intestinal functions of the body due to its high fiber content. This recipe yields approximately eight servings of oat bran pancakes, which can be enjoyed at breakfast or any other meal.


Instructions


1. Combine the oat bran, oat flour, rolled oats, almond meal, and granulated sugar in a large mixing bowl. Mix well to combine and then add the baking powder, baking soda, salt, and ground cinnamon. Mix again to thoroughly distribute all ingredients.


2. Combine the buttermilk and egg in a small mixing bowl. Whisk thoroughly to beat the egg, and then add the mixture to the dry ingredients. Whisk a few times, just enough to thoroughly moisten the dry ingredients. Do not over-mix. The batter should be lumpy.


3. Heat a large skillet over medium-high heat for three to four minutes, or until a drop of water sizzles when placed on the cooking surface. Remove the pan from the heat and spray with vegetable oil cooking spray. Return to the burner immediately.


4. Pour about three tbsp. of batter onto the hot skillet and cook for two to three minutes, or until bubbles begin to form and break around the edges. Flip with a spatula and cook the other side for two to three minutes. Remove the oat bran pancakes from the pan and place on a serving plate.


5. Turn the oven to 200 degrees F and place the plate inside. This will keep the oat bran pancakes warm while the others are being cooked. Cook each one and, as it's done, place it on the plate and back into the oven. Serve pancakes with butter, syrup and ground cinnamon, if desired.
