Eat Cabbage With Junk Food

Cabbage can be added to many types of "junk food" to make a healthier meal.

When you think of foods that are rich in vitamin C, you probably think of oranges. However, one cup of chopped cabbage actually contains 54% of your recommended daily allowance of vitamin C, as well as smaller amounts of other important nutrients like vitamin A, iron and calcium. And a cup of chopped cabbage only has about 22 calories. If you are looking for a healthy vegetable to sneak into some of your family's favorite junk food, cabbage is a good choice.

Instructions

1. Pack it into egg rolls. Fried foods stuffed with lean pork can be made healthier, at least in terms of vitamin content, by adding lots of red or green cabbage to each egg roll before frying.

2. Serve up rich Southern fried chicken from a fast food joint with a side of creamy coleslaw. Try to use a little less mayo/dressing, and a little more cabbage than you might normally use.

3. Substitute cabbage leaves for buns, bread, or tortilla wraps to cut carbs from fatty burgers or greasy tacos. You can even use shredded cabbage instead of shredded lettuce as a topping for these foods.

4. Update your favorite cookie recipe with cabbage. You can make vegan cookies by combining cabbage, almond butter and flax seed, turning cookies from a junk food into a healthy food.
