Easy Dinner Meals

Whether you're a busy parent with little time on your hands, or you're wanting to make more quality time available to spend with your family, knowing prepare quick meals is a beneficial way to save time. You don't have to have a culinary degree to make an easy meal with a gourmet taste.


Skillet Chicken








Combine the following ingredients in a large skillet on medium heat: 1 cup chopped onion, 3 tbsp minced sage, 4 large chopped carrots, 1 can of cream of mushroom soup, 2 cups of water, and 1 cup of brown rice. Cook the mixture on medium heat for approximately 15 minutes and then add four to six chicken thighs or drumsticks. Cover the pan and let it cook on medium heat for approximately 45 minutes. Turn the chicken and stir the rice frequently to prevent scorching.


Easy Pasta Salad


Combine the following fresh ingredients in a saute pan: 2 cups sliced zucchini, 1 cup diced onion, 2 cups of halved cherry tomatoes, 1 cup alfalfa sprouts, 1 cup sliced mushrooms, and 3 cups of carne asada steak strips. Saute in a tbsp. of butter until the meat is well done and the vegetables are slightly scorched. Bring two pounds of penne pasta to a rolling boil and then strain the pasta before adding it to a large mixing bowl. Dump the sauteed mixture into the bowl with the pasta and toss with crumbled blue cheese. Serve the pasta salad with a slice of garlic bread.


Easy Pizza Dinner


Use a rolling pin to flatten out a pound of prepackaged pizza dough that can be purchased from a grocery store and cover it with plastic. Dice a cup of onion, 1 bell pepper, a half pound of mushrooms, and a cup of black olives. Grate three cups of mozzarella cheese and open a jar of prepared spaghetti sauce and a pack of sliced pepperoni. Use an icing spatula, spread a desired amount of sauce over the uncooked crust, and then spread a 1 1/2 cups of grated cheese on top of it. Scatter the remaining ingredients on top of the cheese and then top it off with extra cheese if desired. Bake on a pizza stone or pan at 400 degrees Fahrenheit for about 15 minutes or until the crust is golden brown. Serve with a simple salad of romaine hearts and ranch dressing.
