Fondue is fun to serve and easy to make.
The holiday party season is in full swing. If you're looking for something different to serve at your next get-together, try this Festive Holiday Fondue. Like most fondue recipes, it incorporates cheese and wine to make a flavorful hors d' oeuvre. The addition of Italian bacon and chives enhances the flavor even more and gives the fondue a colorful, holiday confetti look. Double the recipe if your fondue pot will hold it --- your guests won't be able to get enough.
Instructions
1. Toss the Fontina and Gruyere with the cornstarch in a bowl to thoroughly coat the cheese.
2. Heat the saucepan over medium heat, and saute the pancetta until it is crisp, stirring often. This should take about eight minutes.
3. Remove the pancetta from the saucepan with the slotted spoon, and place it on a plate with paper towels to drain. Pour out any excess oil from the saucepan and discard it.
4. Pour the wine into the saucepan, and bring it to a boil over medium-high heat.
5. Turn the heat down to medium.
6. Add a handful of cheese to the wine and whisk the mixture until the cheese is almost melted.
Continue adding the cheese a handful at a time until it is completely melted and the fondue is bubbling.
7. Stir the garlic and all but 2 tbsp. of the pancetta into the cheese mixture.
8. Add in the pepper flakes, and stir well.
9. Remove the fondue from the heat, and pour it into your fondue pot.
10. Sprinkle the rest of the pancetta and the chives on top of the fondue, and turn on the heat or set the pot over the canned heat or candle if your fondue pot isn't electric.
11. Serve the fondue using the skewers to dip the bread and vegetables.
