If you love to cook and eat good food, you don't have to sacrifice just because you're cooking for one. There are many excellent recipes for one that you can make very quickly and that taste good.
Salads
Keep crisp lettuce greens that are washed and cut in the fridge. Add cooked chicken, black beans, tomatoes, tuna---anything at all---for a quick, healthy meal.
Sandwiches
Use fresh mozzarella and combine it with tomato and basil, or melt some cheddar cheese over sliced turkey and top with sautéed onions and mushrooms for a savory and satisfying meal for one.
Quesadillas
Quickly sauté an onion and some peppers, throw them in a tortilla and add cheese. Crisp on both sides and top with salsa and sour cream.
Steaks
If you're just preparing one serving, you can afford a good cut of steak. A filet mignon seasoned lightly with salt and pepper takes less than 20 minutes to cook on the grill. Serve with a side of salad for some veggies.
Grilling
Try some marinated chicken breast or sausage on the grill. Marinate your meats in the morning before leaving for work, and you'll come home to an effort-free meal.
Leftovers
Just because you're cooking for one doesn't mean you can't make larger dishes that reheat well. Consider baking a half recipe of a lasagna or chicken enchiladas early in the week and then eat the leftovers for one or two nights after.
