Boil Kielbasa & Red Potatoes

New red potatoes are perfect to serve with kielbasa.


Kielbasa, otherwise known as Polish sausage, and red potatoes are common ingredients in one-pot cooking. The most famous of these dishes is called "low-country boil," which is popular in South Carolina and Georgia. You can add seafood and corn to the two main ingredients, but neither of these is necessary to create a simple, one-dish meal that will be enjoyed by everyone at your table.








Instructions








1. Slice the kielbasa into 1- to 2-inch chunks.


2. Place the kielbasa chunks into a heavy skillet over medium-high heat, and cook until browned on all sides.


3. Wash and cut new red potatoes in half.


4. Combine both the kielbasa and the red potatoes in an 8-quart stockpot. Cover with chicken broth. If you don't have broth, you can use water.


5. Bring the pot to a boil, and then turn down to a simmer. Simmer, covered, for 30 minutes or until potatoes can be pierced easily with a fork.
