Cook Chicken Breast With White Rice And Pineapple

Making a delicious chicken dish that does not require a lot of preparation can be a challenge. You can make chicken in a variety of ways, but it often will taste the same if you do not take the time to infuse it with flavor. Instead of baking bland chicken seasoned only with salt and pepper, you can dress up the meal with pineapple chunks and white rice. You can glaze the chicken with pineapple juice to add a sweet taste. The meal pairs well with white rice because the rice absorbs the marinade from the chicken.


Instructions


1. Preheat the oven at 350 degrees Fahrenheit.


2. Remove the skin and excess fat from the chicken breasts.


3. Rinse the chicken breasts off under cool running water. Coat the breasts in flour so that you cover them completely. Place the breasts in a shallow baking dish in a single layer.


4. Mix ¼ cup of soy sauce, ¼ cup of white sugar and the juice from 1 8 oz. can of pineapple chunks. Stir the ingredients until the sugar dissolves.


5. Pour the marinade over the chicken breasts. Sprinkle parsley over the chicken and bake in the oven for 45 minutes.


6. Add the pineapple chunks to the chicken once it finishes baking. Bake the pineapples with the chicken for 15 minutes.


7. Prepare the white rice while the chicken finishes baking. Bring two cups of water to a boil on the stove top. Add 1 cup of white rice, 1 tbsp. of butter and ½ tsp. of salt. Stir until the salt dissolves. Cover the pot and then reduce the heat to a simmer to cook the rice for 15 minutes.


8. Serve the chicken over the white rice on a plate.
