Make Jamaican Fried Dumplings

Fried dumplings are a staple in Jamaica, often served to balance out the heat in spicy Jamaican foods. Their slight sweetness also makes them a perfect breakfast food. Traditionally, they have a number of slight variations, and are also known as johnny cake or festival dumplings. Follow these steps to make Jamaican fried dumplings.

Instructions

1. Sift the the flour, corn meal, salt and baking powder in a large bowl, and stir in the brown sugar.

2. Mix the vanilla, water and half & half in a separate small bowl, and then stir the liquids into the dry mixture, making a soft dough. Knead the dough a few times without removing it from the bowl.

3. Place a dry towel over the bowl and set it aside for about 30 minutes.

4. Flour your hands lightly, and form the dough into eight equal sections. Knead them as you pull and work them into oblong shapes about 1/8 inch thick.

5. Heat the peanut oil and deep-fry the dumplings until they're golden brown, turning them once. Don't allow the oil to get too hot. Frying should take about 3 minutes per side.

6. Remove the Jamaican fried dumplings from the hot oil with a slotted spoon and put them on paper towels to drain.
