Make Orange Fudge

Make Orange Fudge


When you take a bite of fudge, you usually don't expect the taste of orange. However, the combination of tart orange juice blended with the sweetness of fudge makes it a delicious candy that won't soon be forgotten. Orange fudge is great for Christmas but is just as good any time of year.


Instructions


1. Oil your baking pan and then put it to the side.


2. Heat the evaporated milk in the top of a double boiler and keep it warm.


3. Place the sugar in a heavy, deep saucepan. Heat it until it melts and turns a golden-brown color.


4. Heat the orange juice in a small saucepan and pour the hot juice into the melted sugar. Add the orange zest.


5. Stir the hot evaporated milk into the sugar mixture and add the remaining sugar along with a pinch of salt. Dissolve the sugar into the mixture and then cook it until it reaches the soft ball stage at 238 degrees.


6. Remove the mixture from the heat and stir in the butter. Pour the mixture quickly into a mixing bowl and beat it on high speed for 2 minutes.








7. Stir in the walnuts and pour the orange fudge into the oiled baking pan. Allow the candy to cool and cut it into small squares.
