Bake Chicken Kabobs

Chicken kabobs make healthy dinners.


Chicken kabobs aren't just for grilling. If it's the middle of winter or raining, or if you just don't feel like firing up the barbecue grill, bake the chicken kabobs instead. Chicken kabobs are healthful dinner options when you use lean chicken breast meat and a variety of fresh vegetables, such as peppers and onions, to make them. You can customize the chicken kabobs by marinating them in a variety of sauces for added flavor.


Instructions


1. Soak the bamboo skewers in cool water for two hours so they don't burn in the oven. Preheat an oven to 425 degrees F.








2. Place 1/4 cup of olive oil, 1/3 cup of honey, 1/3 cup of soy sauce, 1/3 cup of fresh-squeezed lime juice and 1 tsp. of fresh grated ginger in a mixing bowl. Blend the ingredients using a wire whisk.


3. Cut eight skinless, boneless chicken breast halves into 1-inch cubes and add them to the bowl of marinade. Chop one yellow bell pepper, one red bell pepper and one red onion into 2-inch pieces and place them into the bowl with the chicken. Cover the bowl with plastic wrap and allow the ingredients to marinate in a refrigerator for two hours.


4. Slide the marinated chicken and vegetables pieces onto the skewers, alternating the order.


5. Place the skewers on a foil-lined baking sheet and bake them in the oven for 12 to 15 minutes, or until the chicken is cooked through.
