Make Arugula Salad With Fresh Figs And Prosciutto

Arugula salad with fresh figs and prosciutto is an incredibly easy-to-prepare salad that makes a wonderful first course for a large Italian meal, particularly when served before rich chicken or fish dishes. Combining the earthy taste of arugula with the sweet, rich taste of figs and the salty, fatty flavor of prosciutto, arugula salad with fresh figs and prosciutto is a complex, satisfying salad. This salad also travels quite well, making it ideal for picnics or hikes. Serve with a glass of chilled, dry white wine that will not compete with the sweetness of the figs.


Instructions


1. Tear the arugula into smaller pieces and arrange on four serving plates.


2. Cut each of the fresh figs into quarters with a sharp knife and place them on top of the arugula leaves.


3. Cut the prosciutto into thin strips and scatter the strips over the arugula and figs.








4. Put the extra virgin olive oil, orange juice and honey in a jar with a secure top and shake it until the mixture forms a thick dressing. Transfer the dressing to large bowl.


5. Dice the chili and remove the seeds. Add the chopped chili to the dressing and mix well. Drizzle the dressing over the arugula, fig and prosciutto salad and toss well. Serve immediately.
