Zucchini Substitutes

You can replace zucchini with a variety of other vegetables.


Zucchini is a green vegetable commonly used in soups, stews, sauted as a side dish or even grated and added into breads. If you are sensitive or allergic to zucchini, however, you can replace it in your recipes with other vegetables that have a similar composition and structural stability.


Summer Squash


Summer squash is a vegetable that resembles zucchini in texture and taste, but looks very different from the outside. The skin of a summer squash is a bright canary yellow, which is kept on when eaten. You can cube, grate or slice summer squash just as you would a zucchini, making it a simple alternative for recipes calling for zucchini.


Eggplant








Eggplant is larger than a zucchini, but is similar in taste and texture. Eggplant has a deep purple skin that can be removed or kept, depending on the recipe. The skin should be peeled off using a potato peeler. Eggplants can be baked as a meat replacement, sliced into pasta dishes and lasagnas, grated or cubed.


Cucumbers








Cucumbers look very similar to zucchinis; they have a similar texture but a very different taste. If you are trying to replicate the look of a zucchini in a dish, but not necessarily the taste of the zucchini, cucumbers make a useful alternative. Cucumbers can be sliced, cubed or cut into discs.
