Season Buffalo Wings

Always start with thawed chicken wings.

Buffalo wings, also known as hot wings, are fried or baked chicken wings coated in a spicy sauce. Traditional Buffalo sauce combines hot sauce and butter to achieve its rich flavor. Adding garlic will increase the sauce's potency, and a pinch of salt will further stimulate your taste buds. To season Buffalo wings, you must steam and bake them prior to applying the sauce. This recipe yields enough sauce for 15 Buffalo wings.

Instructions

1. Set a steamer basket into a large pan. Add water to the pan, stopping just before the water touches the bottom of the basket. Place the pan over high heat.

2. Place 15 chicken wings into the steamer basket. Cover the pot and steam the wings for 10 minutes.

3. Line a baking pan with paper towels and place the steamed wings onto it. Refrigerate, uncovered, for one hour.

4. Move an oven's top rack to its center position and preheat to 425 degrees Fahrenheit.

5. Replace the paper towels with aluminum foil and bake the chicken wings for 20 minutes. Flip the wings and bake for an additional 20 minutes or until the wings turn golden brown.

6. Combine the butter, garlic, hot sauce and salt in a mixing bowl. Stir with a spoon to blend. Place the baked wings into the mixing bowl.

7. Toss to coat the wings in an even layer of sauce and serve immediately.
