Correctly Stuff A Jalapeno Pepper

A simple pepper can be used to create a delicious appetizer.

Jalapeno peppers are hot, pungent peppers that can be used in a variety of recipes. They are tasty appetizers when they are stuffed, then grilled over open flame. They are especially popular during the summer months since that is the season most people tend to grill out. They smell delicious cooking and can make any mouth water. For presentation purposes, it's best to know the correct ways to stuff a jalapeno pepper. There are many ways to do this. Choose one way or mix it up. Once you master the practice, your stuffed jalapeno peppers will look as good as they taste. Add this to my Recipe Box.

Instructions

Capped Tops

1. Rinse the whole jalapeno peppers with fresh, cool water. Gently wipe them with your fingers to clean off dirt and grime, paying special attention around the stems. Lay them on a kitchen towel to dry.

2. Use a sharp paring knife to cap the tops of the peppers. Cut about 1/4 inch down from the stem of the pepper. Save the tops for later.

3. Remove the seeds. Rinse the peppers with water to help remove hard to reach seeds.

4. Stuff the jalapeno peppers with your filling. Include a mixture of shredded cheddar cheese, cream cheese and seasonings (salt and Italian seasoning) in each of your peppers. Stuff the peppers using your fingers until the filling spills over the top slightly.

5. Place the peppers in a roaster dish and grill them for about 10 minutes, or until they are soft. A roaster dish is a stainless steel holder that secures the peppers in a vertical position during grilling. Place the caps back on top of the peppers for presentation. If you don't have a roaster dish, wrap your peppers tightly with aluminum foil and lay them on the grill.

Sliced Opening

6. Rinse the whole jalapeno peppers with fresh, cool water as above.

7. Use a sharp paring knife to make a vertical slice on each pepper stretching from the stem to the tip. Remove the seeds using your fingers.

8. Combine cream cheese, shredded cheddar, salt and Italian seasoning together in a bowl. Spoon out a bit of filling and carefully stuff the filling into the opening of each pepper. Sprinkle the top of each pepper with cheddar cheese.

9. Place the peppers on a piece of foil and grill them until the cheese melts. Allow them to cool before eating.
