Make An Irish Wedding Cake

An Irish wedding is not complete without a traditional Irish wedding cake. This is usually a rich fruit cake covered with white icing.


Instructions


1. Gather the necessary ingredients from your local market, including raisins, brandy, glace cherries and brandy.


2. Plan to bake the cake at least one month before your wedding as it will need plenty of time for the flavors to set.


3. Set aside most of a day to prepare the cake since it can take up to 5 1/2 hours to bake.


4. Wind a folded band of newspaper around the upper edge of the baking tin, so that the edges of the cake don't overbake.


5. Check cake frequently while it bakes.


6. Have brown paper ready to cover the top of the pan if it looks like the cake surface is becoming too well-done.


7. Check with a toothpick to see if the cake is done.


8. Allow cooked cake to cool completely.








9. Turn cooled cake upside down and ease it out of the tin onto a board.


10. Poke small holes in the surface with a skewer and pour more brandy over it.


11. Wrap the cake in two layers of greaseproof paper and then cover with tinfoil.


12. Store in an airtight container until the day before the wedding.


13. Ice the cake with white icing.
