In less than ten minute you can whip up the ingredients to prepare this mouthwatering dessert. Combining a lightly flavored pear with a nicely browned pudding makes a great finishing dessert. It's light enough to pair with meats such as lamb, without being overpowering. After making this dessert just once your family will be begging you to make it again and again.
Instructions
1. Preheat oven to 350 degrees.
2. Divide raspberries. One cup will be used in step two while the other will be used in a later step.
3. Crush 1 cup of raspberries as finely as possible. The crushed berries will take up much less space than one cup so fill the remainder of the cup with water.
4. Combine sugar, and cornstarch with the berry and water mixture in a medium saucepan over medium heat.
5. Allow mixture to come to a boil continuously stirring for 2-3 minutes.
6. Remove mixture from heat and stir in the remaining 3 cups of raspberries. Allow to cool
7. Combine remaining ingredients in a large mixing bowl to make the crust for the dessert.
8. Divide the crust mixture into two equal portions and press one portion into the baking pan to make the bottom crust.
9. Cover the bottom crust with the berries mixture.
10. Top with remaining crust mixture.
11. Bake for 25 minutes
