Eating healthy meals while living a busy lifestyle can be daunting. Fortunately, there are many ways to make healthy meals to go that don't require a lot of preparation. Eating healthy foods can help increase energy and concentration, which are essential for anyone with a busy schedule.
Wraps to Go
Wraps are an easy way to create a portable lunch and can be created using various ingredients so they don't become boring. Most grocery stores sell a variety of wraps such as multi-grain tortillas or spinach wraps. Wraps can be filled with a variety of chopped foods including chicken, turkey, hummus, black beans and any vegetables. Hummus with roasted vegetables makes a wonderful vegetarian wrap that tastes wonderful cold, so it travels well. A light layer of cream cheese in a wrap filled with deli turkey, tomato, cucumber and lettuce can create a fast, satisfying lunch. Favorite salads can be put in a wrap so they can easily be eaten on the go.
Salads to Go
Salads are often overlooked when packing lunches, but they are easy to prepare and travel well as long as the dressing is packed separately. Include vegetables such as carrots, beets and sprouts with mixed greens for a meal high in nutrients and fiber. Include a source of protein such as cheese, beans, meat or tofu to create a meal that will keep you satisfied longer.
Beans and Rice
Beans and rice create a complete protein when consumed together and can be a wonderfully satisfying meal (see Reference 1). Peppers, onions, celery and spices can be cooked together and added to black beans for a wonderful flavor combination. Beans and rice can be easily transported by placing them in an airtight container. Use tortilla chips or baked tortillas sliced into chip sizes to scoop up the rice and beans.
