The pre-diabetic stage is often considered the middle ground between full-blown diabetes and normal blood sugar levels. There are many foods that diabetics should not eat while in this stage, though there are also some good foods that pre-diabetics are free to enjoy.
Meats and Proteins
Meats that contain high levels of protein and fiber are perfect for those in the pre-diabetic stage. Meats that are particularly acceptable include poultry such as turkey, duck, chicken, pheasant and goose; beef; pork; lamb; veal; eggs. They can also eat other foods that are high in protein, as long as they make sure that the sugar levels are low.
Seafood
Seafood that contains high levels of protein (specifically, shellfish) are also acceptable. Because shellfish contain high levels of both protein and fiber, they are ideal for those suffering from pre-diabetes. However, many types of fish including mackerel, salmon and catfish should be avoided, as they are highly saturated in natural sodium. Shellfish should not be consumed in excess, however, even for pre-diabetics, as they are extremely high in calories.
Whole Grains
Rather than eating processed grains, pre-diabetics should only consume whole grains like barley, brown rice and other whole-wheat products. You should also eat plenty of healthy legumes such as lentils, kidney beans and pinto beans, which will provide plenty of fiber and a healthy supplement of protein. Avoid processed grains that have a lot of starches or that have reduced fiber content. Whole grains are one of the most basic types of foods that pre-diabetics should eat.
Produce
Make sure that you include plenty of fruits and veggies in your diet. However, stick to the produce that is not very starch-filled like spinach, broccoli, green beans and carrots. When choosing fruits, most work well, as long as they are not coupled with excess sugar: because fruit already contains natural sugar, you should not eat them in excess. Natural fruit juice with no added sugar is also acceptable for pre-diabetics.
