Make A Coconut Key Lime Pie

This twist on the traditional key lime pie recipe tastes like summer in a pie! This pie should serve eight (unless you're very hungry!). You can choose between making your pie crust from scratch or purchasing a ready-made graham cracker crust.








Instructions


1. Preheat oven to 350 degrees.


2. Empty two cans of sweetened condensed milk (this can be fat-free, reduced-fat, or regular sweetened condensed milk) into a mixing bowl.


3. Add three egg yolks (for ultimate fluffiness, beat these eggs before adding them to the mixture).


4. Add one teaspoon of coconut extract (more if you would like a strong coconut flavor).


5. Empty lime juice into mixture and blend well. If key lime juice is available, purchase that for the best key lime juice option.


6. Blend well, using a handheld or electric mixer.








7. Before pouring mixture into bowl, spread shredded coconut over crust.


8. Pour mixture into crust.


9. Cook for 10 minutes. Cool in refrigerator and serve, or top with whipped topping.
