Broccoli & Beef Soup

Wash the broccoli before chopping.


Combine ground beef with fiber-rich broccoli to produce a healthy meal that requires less than one hour preparation and cook time. Onions, garlic and thyme mixed with beef broth add a zesty flavor to the soup. A broccoli and beef soup recipe yields approximately 15 servings.


Instructions


1. Combine 3 lbs. ground beef, 1 cup chopped white onion and 6 tbsp. minced garlic in a large skillet. Cook over medium heat, stirring with a wooden spoon frequently, until the beef is no longer pink. Drain any beef fat from the skillet and transfer to a large stockpot.


2. Add 10 cups beef broth, 2 tbsp. dried thyme and 4 tbsp. tomato paste to the stockpot and stir to mix all ingredients. Bring to a low boil over medium-high heat.


3. Add 12 cups chopped fresh broccoli to the stockpot and stir to distribute evenly throughout the soup. Reduce heat to medium-low and simmer for 30 minutes.








4. Ladle into serving bowls, add salt and pepper to taste.
