Cook Potato Slices In Oven

Slice and cook potatoes in the oven for a hearty dish.


Potatoes are comfort food. Mashed, baked and french fries top the list, but not far behind are sliced potatoes cooked in velvety sauces like scalloped and au gratin, as well as crisp oven-roasted slices. These dishes are easy to make in the oven. Assemble sliced potatoes and accompanying ingredients and let the dish cook while you tend to the rest of the meal.


Instructions


Oven-Roasted Potato Slices


1. Cover a baking sheet with aluminum foil and spray with non-stick spray. Preheat the oven to 400 degrees Fahrenheit.


2. Toss raw potato slices in a bowl with olive oil, salt, pepper, onion and garlic powder, oregano and basil. Adjust seasonings to taste.


3. Lay the coated potato slices on the baking sheet in one layer.


4. Place the baking sheet in the oven and let the potato slices roast for a total of about 30 minutes. After about 20 minutes, take the baking sheet from the oven and close the oven door.


5. With kitchen tongs, turn the slices over. Return the baking pan to the oven. Check the potatoes often and remove when they are golden brown on both sides.


6. Add salt if necessary and serve while hot.


Cooked with a Sauce


7. Spray a 2-quart casserole dish with non-stick spray. Preheat the oven to 350 degrees Fahrenheit.


8. Mix golden mushroom soup and milk until well blended. Set aside.


9. Place half the raw potato slices in the bottom of the casserole dish, overlapping as necessary. Layer half of the onions and half of the mushrooms.


10. Repeat layering with the remaining potato slices, onions and mushrooms.


11. Pour the soup and milk mixture over the casserole gently so the layers aren't disturbed.


12. Cover the casserole with a tight-fitting lid or aluminum foil and place it in the oven.


13. Bake for an hour or until potato slices are tender. Remove the dish from the oven.


14. Remove the lid carefully and add cheddar cheese if desired. Cover the dish again and let the cheese melt, then serve while hot.
