Grill Eggplant On A Gas Grill

Grilling eggplant is a good way to enjoy its texture and flavor while retaining its nutritional value. It's especially good served with other grilled vegetables or as a side dish to accompany grilled salmon. Here's grill eggplant properly to achieve the desired results. Add this to my Recipe Box.

Instructions

1. Choose eggplant that feels heavy for its size and has a smooth, firm and shiny skin. Eggplant is very perishable and requires careful handling. Store it in a cool, dry place and use it within a few days after purchase.

2. Prepare the eggplant for grilling by cutting it in ?-inch disks and patting it dry before seasoning.

3. Brush both sides of the eggplant with a small amount of butter and seasonings. A mop made of butter, beer and garlic salt adds extra flavor to any grilled vegetable. This is often added prior to and during the grilling process as needed for extra flavor.

4. Fire up the grill to a medium-high heat and lightly oil the grates to keep the tender vegetables from sticking.

5. Place the eggplant on the preheated grill. Let it cook for 5 to 10 minutes or until it's golden brown and has nice grill marks.
