Chicken Over Lettuce Salad

Top a healthy salad with high-protein chicken breast.


Make a healthy and filling salad with grilled chicken breast, crisp lettuce and a rainbow of fresh vegetables. If you're watching your weight or looking for a well-balanced, nutritious meal, you can't go wrong with a grilled chicken salad. If you have a family of picky eaters, you can customize the salad according to specific tastes by using a variety of vegetables and providing several types of dressing, such as Caesar, ranch and tangy sweet honey mustard.


Instructions








1. Coat the chicken breasts with olive oil. Sprinkle both sides of each chicken breast with salt and ground black pepper to taste. Wash your hands thoroughly with soap and water to prevent the spread of bacteria.


2. Place a non-stick grill pan over medium-high heat. Set the chicken breasts into the pan and grill them for seven minutes on each side, or until they are completely cooked through. Take the chicken out of the pan and set it on a plate.


3. Chop romaine lettuce and place it into a large salad bowl. Dice avocado, red onion, cucumber and tomatoes and place them into the bowl. Toss the vegetables with salad tongs to mix.


4. Chop the chicken breasts and set the pieces on top of the salad. Sprinkle shredded cheddar or Monterey jack cheese over the top of the chicken. Serve the salad with a choice of salad dressings.
