Instructions

Spicy Peanut Stir Fry Sauce

1. Bring a pot of salted water to a boil for your stir fry noodles. Once it reaches a rolling boil, cook your noodles for 3 to 4 minutes, then drain.

2. Combine the peanut butter, water, soy sauce and oil until incorporated and smooth. Beat the mixture with a whisk or fork, or throw it in the food processor to get it really smooth. Add the brown sugar, garlic and red chili paste to taste. Take care not to rub your eyes after you've touched red chili paste -- it can really burn.

3. Add 2 tbsp. of sesame or canola oil to a nonstick frying pan or wok and let it heat for a few seconds. Add crushed garlic to the oil, then your protein if you are using any. Cook the protein until it's browned and the juices run clear, then add your vegetables and the peanut sauce. The vegetables should ideally be tender but firm. For sturdy vegetables like broccoli and carrots, cook for three to five minutes; for peppers, onions and string beans and snap peas, cook for two to three minutes or until the peanut sauce is almost boiling. If it begins to boil, reduce the heat.

4. Add your cooked noodles to the wok if you want to give them the same spicy peanut flavor. Otherwise, serve the noodles with sesame oil and soy sauce and add the stir fry on top. Consume immediately.
