Make Homemade Green Enchilada Sauce

Make your own green sauce.








Create your own green sauce to dress up your homemade enchiladas. This recipe starts with tomatillos, which have a husk but look like small green tomatoes. Freeze any leftover sauce for your next batch of enchiladas or store in the refrigerator and pour over tacos or use as a dip for tortilla chips.


Instructions


1. Check your grocery store for fresh tomatillos.


Use fresh or canned tomatillos. Remove husks from fresh tomatillos and wash off the sticky residue. Arrange in a singe layer on a baking sheet. Peel the onion, cut into quarters and add to the baking sheet. Also peel the garlic and put in the pan as well. Add in the chili pepper if you want a spicy kick.








2. Drizzle olive oil on the tomatillos, onion, pepper and garlic, and place under the broiler until they just start to blacken and the tomatillos pop open.


3. Remove the baking sheet from the oven and place the roasted vegetables in a blender or food processor. Add the lime juice, cilantro and cumin, and sprinkle in salt and pepper to taste. Blend until smooth.
