Make Broiled Turkey With Soy Sauce

This flavorful take on turkey is both zesty and juicy. Serve it for a small, nontraditional Thanksgiving or just for dinner. Serves 4.


Instructions


1. Split the turkey and remove the breastbone and backbone. If you wish, have a butcher do this for you with a fresh turkey.








2. Combine the wine, soy sauce, garlic cloves, olive oil and Tabasco sauce in a shallow bowl. Mix well.


3. Put the turkey in the bowl with the marinade and marinate at least 4 hours, turning the turkey several times during the marinating period.


4. Adjust the oven rack so that when the turkey is on top of the broiling pan, the bird is 4 to 5 inches away from the heat.


5. Place the turkey on the broiling pan and broil, bone side to the heat, about 25 minutes, basting every once in a while with melted butter.








6. Turn the turkey after 25 minutes, brush with more butter, and broil another 18 to 25 minutes, or until the turkey is nicely browned and cooked through.
