Make Vegetarian Black Refried Beans

Do you love good refried beans? Then toss away that empty can and create your own. These rich delicious beans are good for at least a week in the refrigerator and can enhance all kinds of dishes. Read on to learn make vegetarian black refried beans.








Instructions


1. Soak beans in water for two hours or more. Make sure water more than covers the black beans, which will swell.


2. Using a sieve or colander, rinse beans under cold water and place them in pot or Dutch oven. Add bay leaves and garlic. Cover with several cups of water and cook on medium heat, partially covered, for one hour or until tender.


3. Remove beans from pot. Then pick out the bay leaves and garlic. Heat 1 tbsp. peanut oil in the now empty pot. Add beans, 1 tsp. chili powder, 2 tsp. oregano, bouillion cube and diced tomatoes (if desired).








4. Simmer mixture on medium low heat covered for one hour, mashing with a potato masher or whatever mashing instrument is available every 10 to 15 minutes. Salt to taste and serve.


5. Enjoy alongside any fish, rice or breakfast dish or as a filling in tortillas, tacos and quesadillas--even as a warm or cold dip (mixed with sour cream). This is delicious with grated cheese on top, sour cream, salsa and avocado slices--you name it.
