Make Broccoli Salad With Cranberries

Adding a sweet sauce and cranberries makes vegetable salads a hit.


If you are looking for a side dish, but tired of the same old green salad, try a broccoli salad. Instead of lettuce as the main ingredient, broccoli provides a crunchy base, and the sweet dressing will be a hit with finicky eaters. The salad also helps sneak an additional servings of vegetables into a tasty dish. The addition of dried cranberries in place of standard raisins makes for an unexpected touch. The dish is cool and refreshing, making it great for a summer barbecue.


Instructions


1. Remove the stem from the broccoli heads. Cut the florets into pieces slightly smaller than bite sized, and transfer to one bowl. Be sure to transfer the crumbs as well.








2. Add the bacon, onion and cranberries to the broccoli. Dice the cheddar into bite-size cubes, and add to the broccoli mixture. Stir the mixture gently.








3. Add the mayonnaise, vinegar and sugar to the second bowl, and mix well. Pour the dressing over the broccoli mixture, and stir until well-combined. Season with salt and pepper. Arrange the tomato slices over the top in a creative design.


4. Cover and store in the refrigerator until chilled.
