Arugula salad with fresh figs and prosciutto is an incredibly easy-to-prepare salad that makes a wonderful first course for a large Italian meal, particularly when served before rich chicken or fish dishes. Instructions
1. Tear the arugula into smaller pieces and arrange on four serving plates.
2. Cut each of the fresh figs into quarters with a sharp knife and place them on top of the arugula leaves.
3. Cut the prosciutto into thin strips and scatter the strips over the arugula and figs.
4. Put the extra virgin olive oil, orange juice and honey in a jar with a secure top and shake it until the mixture forms a thick dressing. Transfer the dressing to large bowl.
5. Dice the chili and remove the seeds. Add the chopped chili to the dressing and mix well. Drizzle the dressing over the arugula, fig and prosciutto salad and toss well. Serve immediately.
