Fry Gnocchi

Frying gnocchi is a tasty way to prepare this traditional Italian dumpling.

The word gnocchi translates to "a stupid person"; why it came to describe fluffy Italian dumplings is unknown. Served as an appetizer, side dish or main course, there are many versions of this potato, flour and egg dumpling. Pan-frying adds a crispy golden crust while leaving the inside soft.

Frying gnocchi is simple and quick. Add a sprinkling of fresh grated Parmesan and you have a nice side dish. However, with a little creativity, fried gnocchi can become a gourmet indulgence. Try a Gorgonzola cream sauce or browned butter and sage to dress them up.

Instructions

Pan-Fried Gnocchi

1. Add olive oil and butter to skillet and heat at medium-high.

2. Add gnocchi to skillet and fry five to six minutes, stirring regularly. Take care not to break the dumplings.

3. Remove gnocchi with a slotted spoon when they become crispy and golden brown. Don't overcook or they will become hard.

4. Sprinkle with Parmesan cheese while still warm. Add salt and pepper to taste. Pair with a slightly sweet wine like a Riesling.
