Make Asian Fried Peas







Prepare a healthy and crunchy snack with fried peas.


Asian fried peas, also known as chana, are a popular Indian snack. They have a crunchy, nutty flavor and are prepared from green chickpeas or green peas. Rich in fiber and protein, and low in sodium and fat, fried peas are a healthy snack substitute for peanuts. While fried peas are available in the supermarket, you can purchase dried shelled peas and prepare your own fried pea seasoning. Enjoy fried peas on their own, or use them as part of a salad garnish, or in a stir fry.








Instructions


1. Set 1 cup of either dried chickpeas or green peas in a large bowl. Fill the bowl with water. Add 1 tsp. of bicarbonate of soda, place a lid over the bowl, and let it stand for at least 12 hours. Drain, and rinse with cold water and set aside.


2. Heat 1/4 cup of cooking oil in a saucepan on high heat until it boils. Reduce the heat and let it simmer. Add the chickpeas and saute them for four minutes, or until they turn golden brown. Stir the chickpeas continuously with a slotted spoon to prevent them from burning.


3. Place the fried peas in a bowl lined with paper towels to drain the excess oil. In a large serving bowl, combine 1 tsp. each of red pepper flakes, coriander powder, salt and mango powder. Add the fried peas and mix thoroughly.


4. Sprinkle lemon juice according to your preference and serve warm.
