Prepare Slivovitz

Slivovitz is a popular fruit brandy, also known as a Sliwowica or Slovovica. Most Europeans, especially in the eastern and central parts of the continent, create their own Slivovitz at home. It is considered the national drink of the Balkans and is made from ripe plums harvested in autumn. Preparing your own bottle of Slivovitz is easy as long as you have all the necessary ingredients.


Instructions


1. Wash the plums with warm water and remove the stems. Do not remove the stones.


2. Dice your plums using your kitchen knife and place them inside the pot. Crush the plums with your pestle to get as much juice out of the fruits as possible.








3. Allow the juice to ferment without adding any yeast or sugar to the liquid. Fermentation may take six to eight weeks.


4. Cover the pot while leaving a tiny space for gases to go out. Use a strainer to get all the juice and liquid out of the fermented fruits and place it in a separate bowl.


5. Place the juice in bottles and cork it to leave them for maturation. Maturation can take 12 months before the Slivovitz becomes fully ready for drinking.
