Make Lemonbased Salad Dressing

A lemon-based salad dressing adds zip to your salad without piling on calories.








If you love a good homemade salad, you should also make the extra effort to create your own salad dressing to accompany your healthy greens. A lemon-based salad dressing is a tangy way to liven up your salad and not add too many calories to the dish. This salad dressing also can be used on steamed vegetables to give them a little kick. Use fresh ingredients for the best results. This method yields about 6 servings of 2 tbsp. each.


Instructions


1. Roll room-temperature lemons on a counter for 30 seconds. You also could microwave the lemons for 20 seconds to make the juice easier to obtain. Slice the lemons in half and juice them. Collect at least 1/2 cup of juice from the lemons, removing any seeds.


2. Add to the lemon juice a 1/2 cup of olive oil, salt and pepper, and minced garlic, to taste. Whisk the ingredients together. This creates a clear vinaigrette.








3. If you wish to make a creamier dressing, whisk in 1/2 tsp. of Dijon mustard to the vinaigrette.


4. Pour the lemon dressing into a serving cruet. Serve immediately or refrigerate. Shake before using.
