Make Lemon Cookies Using Lemon Cake Mix

A number of recipes are available for making lemon cookies using a lemon cake mix. Two recipes are quite easy and make great tasting cookies. One requires Cool Whip. The other requires eggs, vegetable oil, and a tasty icing. Whichever recipe you choose, the lemon cookies will be a soft cookie, which will complement any cup of tea, coffee, or glass of milk.








Instructions


Make Lemon Cookies with Cool Whip


1. Combine one lemon cake mix, one 9 ounce tub of Cool Whip, and one egg. Mix the ingredients together with an electric mixer until well blended.


2. Drop the cookie mixture by teaspoonfuls into the 1/2 cup of confectionery sugar. Roll into balls and place on a cookie sheet.


3. Place in an oven preheated to 325 degrees. Bake the cookies for approximately 15 minutes or until lightly brown. Remove from the oven and cool on a cookie rack.

4. Combine the cake mix, two eggs, and 1/2 cup of vegetable oil. Mix until the ingredients are well blended.


5. Drop the dough by rounded teaspoonfuls onto the cookie sheet. Place in an oven that has been preheated to 350 degrees. Bake for approximately eight minutes. Remove from the oven.


6. Combine the confectionery sugar, lemon extract, and milk to make a thin icing. Use just enough milk to make the icing a consistency for easy drizzling on the cookies. While the cookies are still warm, drizzle on the icing or wait until the cookies are completely cooled, if you do not want the icing to melt into the cookies.
