Use Rice as a Dessert
Rice is a wonderful addition to any meal but did you know rice is also great for dessert? There are many ways to use rice for desserts besides our mom's rice pudding.
Instructions
1. Gather your ingredients and pre-heat your oven to 350 degrees. Cook 1 cup of the rice. Beat 8 eggs and cut lemon in half and juice just one of the halves.
2. Mix together rice, eggs, Ricotta, sugar, lemon juice, cinnamon and vanilla. Then place the pie crust in your baking pan and pour in the rice mixture.
3. Bake until firm for 1 hour. Let pie stay in oven for at least 1 hour after it's done. Enjoy with your favorite coffee or hot tea.
4. Make a rice pie crust if desired. Brown rice works well for this. Simply oil your pie pan with extra virgin olive oil and press cooked rice onto the bottom and sides. Put in 350 degree oven for five minutes till it dries out a bit. Then you can add your pie filling and bake as usual. You can even use this for other cream pies such as banana cream for example.
