Make Oregano Pesto

Pasta with oregano pesto








Pesto is an ancient recipe that turns herbs into a tasty sauce. Pesto is most commonly made with basil, but you can make it with any herb, such as oregano. Use fresh oregano instead of dried for the best flavor. Oregano pesto can be used on any dish that basil pesto is used on, such as baked chicken, pasta, pizza and bread. It can also be enhanced with other flavors, such as lemon and black pepper.


Instructions


1. Place the oregano, spinach, Parmesan cheese, walnuts, salt and garlic cloves into a food processor. Process until as smooth as possible.


2. Pour olive oil into the food processor. Process until smooth.


3. Taste the pesto. Add additional olive oil if you desire extra smoothness.


4. Add more of the other ingredients as needed to intensify flavor. Add extra walnuts for a chunkier texture.








5. Store in a clean jar in the refrigerator. Add 1/4 inch olive oil over the pesto to keep it from spoiling.


6. Use as a sauce on pizza in place of tomato sauce; as a dipping sauce for bread; as a pasta sauce; or as a sauce on meats, fish or vegetables. Many recipes will include their own instructions for oregano pesto, so adjust accordingly. Add a small amount of lemon juice or lemon zest to the pesto if using it on fish.
