Make Yogurt Cucumber Salad

With their mild flavor and crunchy texture, cucumbers are perfect for summer. A cucumber's flesh is packed with vitamin C, vitamin A and folic acid. Eat them with the skin whenever possible so you don't lose a rich source of fiber. Use English cucumbers for this delicate yogurt salad to cool you down on a hot day.








Instructions


1. Wash the cucumber well under running water. Cut into thin slices. For large pieces, cut in half.


2. Place the cucumber slices in a strainer and salt lightly. Mix them with your hands to coat evenly with the salt. Set aside.


3. Mash the garlic cloves with a garlic press into a small bowl.


4. Add the lemon juice and sugar. Whisk until the sugar is dissolved. Pour the yogurt, sour cream and dill in and stir gently with a fork until smooth.


5. Taste the dressing to make sure it's not too sweet or sour. Add more sugar if it's too sour or more lemon juice if it's too sweet. Place the dressing in the refrigerator to let the flavors blend.


6. Spread a paper towel out on the table and put a single layer of cucumbers on it. Soak up the water from the cucumbers as much as possible with another paper towel on top. Repeat this process on all of the cucumbers.


7. Coat the cucumbers thoroughly with the yogurt dressing. Let it sit in the refrigerator for a day before serving.
