Eat Raw Pumpkin

Pumpkin seeds are full of antioxidants.


Raw pumpkin can be used to make a variety of recipes, and there's good reason for including this nutrition-packed vegetable in your diet. Pumpkin is rich in Vitamin A and minerals. In addition, the meat of the pumpkin contains a large amount of carotenoids, according to the Super Food Rx website. Raw pumpkin can be used to create a variety of delicious drinks, such as smoothies and "eggnog." Pumpkin soup is another possibility for making this flavorful squash part of your menu plan.


Instructions


Pumpkin Smoothie


1. Combine pumpkin, milk or yogurt, cinnamon, nutmeg, brown sugar and ice cubes in a blender.


2. Set your blender to "Medium" speed or choose the "Smoothie" option.








3. Blend for one to two minutes until creamy.


Pumpkin Soup


4. Combine pumpkin and apple in food processor until smooth.


5. Pour in coconut water and add garlic, onion, tahini, thyme, sea salt and paprika.


6. Process ingredients until they have a smooth texture.


7. Transfer mixture to a saucepan.


8. Simmer for 15 minutes, stirring until ingredients warm.


Pumpkin "Eggnog"


9. Juice small pumpkin, according to your juicer's instruction.


10. Pour the resulting pumpkin juice into your blender.


11. Add ginger, cinnamon and honey.


12. Blend on "Medium" speed for one to three minutes until ingredients are combined.


13. Dilute the taste by adding water if the "eggnog" is too rich.


14. Chill mixture before serving.
