Sushi rice becomes stiff if stored for more than a day.
Sushi is a dish originating from Japan that consists of cooked rice and other ingredients, such as fish or seafood, that is wrapped in seaweed called "nori." You are supposed to consume sushi while it is fresh, so if you've ordered too much, storing it without ruining the texture of the rice can be a challenge. However, you can take a few steps to preserve your sushi rice for at least a little while.
Instructions
1. Refrigerate the sushi less than 30 minutes after it is made -- the sooner the better. Consider throwing the sushi out if you're not going straight home after ordering it, as spoiled sushi can make you sick.
2. Wet two kitchen towels with water, squeeze out any excess water and spread one towel flat over a plate. Place the sushi on top of the towel, and cover the food with the other damp towel. Wrap the whole thing in plastic wrap, and refrigerate it. This will keep the rice from drying out and becoming stiff, although it will hurt the texture of the nori.
3. Line a nonmetal bowl with a damp towel, and place the sushi rice in the bowl if that's all you want to preserve. Cover it with a damp towel. Wrap the bowl in plastic wrap, and refrigerate it.
